Steaming and pouring your milk

With the steamer wand held horizontally, slowly move it forward from left to right at a 45-degree angle while moving it up and down slightly with your hand. This action will help produce microfoam, a creamy foam that floats on top of your finished espresso cream. It must take about 30 to 40 seconds for the milk to be heated appropriately, resulting in enough foam floating on top of the latte for garnish purposes.

Measure and tamp your coffee.

Tamp the coffee grounds down for about 15 to 20 seconds. Turn the steam valve to release water pressure in the steam wand, thus removing any excess water and help decrease the deposition of unwanted flavours in your espresso shot by preventing over-steaming. You can set your cup on top of the steamer wand, or you can hold it as you usually would with a barista's spoon, such as an X-Cup. Either way, first pour a small amount of cold milk into your mug so that its temperature is close to room temperature before adding hot milk.

  8. Position the steam wand so that it is aiming down inside the mug approximately half-way from its rim.
  9. Turn off the steam valve once you feel released pressure coming through the portafilter.
  10. Place a filter holder or basket over your mug.
  11. When you turn on the pump, espresso should flow into your cup.
  12. Add sugar(optional) and serve.
