These beans can be a bit "dirty" and can have some ash on them, so a good purge is recommended. This roaster only offers beans roasted within the last ten days for whole bean coffee, so it's best to grind these yourself just before use.

Making crema is an art. Making a perfect crema is even more of an Art! The success of the "espresso italiano" largely depends on the quality of this aspect: no matter how good your machine is, if you cannot obtain a good crema, you will never obtain the taste and aroma expected from Cafe Italiano.

The reason why it is so hard to make a perfect crema lies in the use of over-roasted and decomposed beans. What you want is an espresso with a thin layer of homogeneous brownish/yellow foam on top.

A good crema brings out the oil contained in the coffee, making the "Caffe Italiano" rich, mellow and enjoyable. If you can read this article, then it means that your last attempt at making crema was not successful. You have either got a bad machine or bad quality coffee. To make the perfect crema you will not only need the best espresso beans for crema but also other factors should be considered as we shall discuss below in this article.

  • Coffee Amount

Use two spoons of coffee per single espresso cup (the classic one). If you are using a double boiler machine, use twice that amount. You can also use more coffee. If you are using a pump machine- the kind of machine used in Italy for making crema- use three spoons per cup, never less than that.

If you possess pre-roasted beans, keep them in an airtight container no longer than two months, and make sure they are not exposed to humidity during storage.

The grinder is one of the most important factors required to get crema. Never use a whiling grinder. There is no way you can obtain a good Crema with such a machine. If you do not have an espresso grinder, buy your coffee already grounded at your local supermarket or coffee shop. Always use a proper filter system such as a Moka pot, filtered espresso or pump machine.
